Fat loss

Hi, posted here last year when I was trying to cut leading up to summer, failed so just kept eating normal and lifting. Started cutting again in April, I got up to 228lb at my peak, I’m now down to 214. But it hasn’t been smooth.
Cutting confuses me, I know it sounds simple but putting it into action I find difficult, let me explain.
I’m 6.2 and weigh 214, I supposedly have a maintenance around 3000kl so doing the maths I should be cutting at 2000-2500kl a day, when I eat at these numbers I don’t loose weight, what happens is I start slowing down literally, I have no energy I feel like falling asleep all day, no motivation nothing. Working out I don’t burn a lot of calories cos I have no energy so don’t put a lot in. Then when I do eat it’s like my body just stores it and I start to slowly put weight on because my body has slowed down (if that makes any sense). On the flip side, when I up my calories and eat around 2800-3000kl my body speeds up my metabolism speeds up I have energy and motivation and expend energy lifting weights and cycling, and I get hungry and want to eat more but Stop around 3000 and I end up loosing weight, wtf!
I asked this last time but could it be that my maintenance is higher then 3000 and when I’m eating at 3000 I’m actually in a good defecit and that’s why I have more energy but still loose weight? Like maybe my maintenance is 3500 and eating at 3000 is a defecit for me?
It’s like when I go below 2800 everything stops, even if I go right down and eat at 2200kl I won’t loose weight, I literally have to go down to like 1400kl for my weight to drop rapidly. Confused as hell man.
